Tofu Tikka Masala

No "cheesy" pun needed for this tofu-tikka masala dish!  Spice up your BBQ menu with this healthier and cruelty-free classic!

Ingredients
  

  • ½ cup Greek yogurt alternative
  • 2 Tbsp cilantro, finely chopped
  • 2 Tbsp mint, finely chopped
  • 1 Tbsp fresh ginger, grated (optional)
  • 2 tsp coriander powder
  • 1 tsp red chili power
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • 1 tsp dried kasuri methi
  • ½ tsp salt
  • 14 oz block of tofu, cubed
  • 2 cups veggies of choice (e.g. green bell peppers, cherry tomatoes, red onion)

Instructions
 

  • Mix Greek yogurt and spices. Coat tofu and veggies of choice in mixture. Marinade overnight (or for at least one hour).
  • Preheat oven to 450oF. Assemble skewers. Bake for 10 minutes, flip, and then bake for an additional 15 minutes.
