Apple-Pear Tart with Apricot Glaze

Home is where the “tart” is.  This rustic apple-pear tart is a great comfort dessert.  The apricot glaze adds an elegant sheen.  It pairs well with tea yet can still be enjoyed anytime!

Ingredients
  

  • 2 large apples, peeled and thinly sliced
  • 1 large pear, peeled and thinly sliced
  • 1 ½ cup all-purpose flour
  • ½ cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 4 ½ tsp cornstarch
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • ¼ cup fresh orange juice
  • cup brown sugar
  • ½ cup apricot jam, warmed

Instructions
 

  • Beat together butter and cream cheese.  Gradually add flour, beating until the mixture / dough forms a ball.  Cover and refrigerate the dough for 1 hour.
  • Preheat oven to 375oF.  Line a baking sheet with parchment paper and set aside.
  • Combine cornstarch, cinnamon, cardamom, and nutmeg.  Stir in orange juice followed by brown sugar until well blended.
  • In a large bowl, mix together apples and pears.  Add spiced brown sugar mixture.  Gently stir until all surfaces of fruits are covered.
  • On a lightly floured surface, roll out dough into a 14” diameter circle.  Carefully lift and place onto the lined baking sheet.
  • Spoon fruit filling over pastry, leaving a 2”crust / border.  Fold the edges of the pastry over the filling, leaving the center open and uncovered.
  • Bake for 40 – 45 minutes or until crust is golden.  The filling will bubble when ready.  Once fully baked, remove from oven.  Spread apricot jam over exposed crust using a pastry brush.  Return glazed tart to oven for 2 – 3 minutes to allow glaze to slightly caramelize.  Remove from oven and cool before serving.
