Beat together butter and cream cheese. Gradually add flour, beating until the mixture / dough forms a ball. Cover and refrigerate the dough for 1 hour.
Preheat oven to 375oF. Line a baking sheet with parchment paper and set aside.
Combine cornstarch, cinnamon, cardamom, and nutmeg. Stir in orange juice followed by brown sugar until well blended.
In a large bowl, mix together apples and pears. Add spiced brown sugar mixture. Gently stir until all surfaces of fruits are covered.
On a lightly floured surface, roll out dough into a 14” diameter circle. Carefully lift and place onto the lined baking sheet.
Spoon fruit filling over pastry, leaving a 2”crust / border. Fold the edges of the pastry over the filling, leaving the center open and uncovered.
Bake for 40 – 45 minutes or until crust is golden. The filling will bubble when ready. Once fully baked, remove from oven. Spread apricot jam over exposed crust using a pastry brush. Return glazed tart to oven for 2 – 3 minutes to allow glaze to slightly caramelize. Remove from oven and cool before serving.
