Banana-Oat-Walnut Bread

This banana bread is fluffy, moist, healthy AND delicious– a special recipe that certainly has broad A-PEEL!  This Greek yogurt-based bread does not contain any butter, oil or refined sugars!

Ingredients
  

  • 1 ¼ cup spelt flour (may be replaced with all purpose flour)
  • ¾ cup rolled oats
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • 2 Tbsp flaxseed meal
  • 6 Tbsp warm water
  • 2 very ripe bananas, mashed
  • ½ cup plain Greek yogurt
  • cup agave nectar
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts

Instructions
 

  • Preheat oven to 350oF.
  • Grease and flour a 9 inch loaf pan.
  • In a large mixing bowl, wisk together spelt flour, baking soda, and cinnamon.  Stir in oats.
  • Prepare flax eggs by mixing together flaxseed meal and water.  Let the mixture sit and thicken for 5 minutes.
  • Mix together bananas, Greek yogurt, agave nectar, and vanilla extract.  Add flax eggs.
  • Add wet ingredients to dry ingredients and mix until well combined.  Fold in walnuts.
  • Pour batter into loaf pan and bake for 35 – 40 minutes or until an inserted toothpick comes out clean.  Remove from oven and cool for 30 minutes before transferring.
