Banana-Oat-Walnut Bread
This banana bread is fluffy, moist, healthy AND delicious– a special recipe that certainly has broad A-PEEL! This Greek yogurt-based bread does not contain any butter, oil or refined sugars!Feel free to share questions or comments below. Ingredients
- 1 ¼ cup spelt flour (may be replaced with all purpose flour)
- ¾ cup rolled oats
- 1 tsp baking soda
- ½ tsp ground cinnamon
- 2 Tbsp flaxseed meal
- 6 Tbsp warm water
- 2 very ripe bananas, mashed
- ½ cup plain Greek yogurt
- ⅓ cup agave nectar
- 1 tsp vanilla extract
- ½ cup chopped walnuts
Instructions
- Preheat oven to 350oF.
- Grease and flour a 9 inch loaf pan.
- In a large mixing bowl, wisk together spelt flour, baking soda, and cinnamon. Stir in oats.
- Prepare flax eggs by mixing together flaxseed meal and water. Let the mixture sit and thicken for 5 minutes.
- Mix together bananas, Greek yogurt, agave nectar, and vanilla extract. Add flax eggs.
- Add wet ingredients to dry ingredients and mix until well combined. Fold in walnuts.
- Pour batter into loaf pan and bake for 35 – 40 minutes or until an inserted toothpick comes out clean. Remove from oven and cool for 30 minutes before transferring.
