Banana-Oat-Walnut Bread
This banana bread is fluffy, moist, healthy AND delicious– a special recipe that certainly has broad A-PEEL! Diet Jain, No Refined Sugars & Grains, Vegetarian
- 1 ¼ cup spelt flour (may be replaced with all purpose flour)
- ¾ cup rolled oats
- 1 tsp baking soda
- ½ tsp ground cinnamon
- 2 Tbsp flaxseed meal
- 6 Tbsp warm water
- 2 very ripe bananas, mashed
- ½ cup plain Greek yogurt
- ⅓ cup agave nectar
- 1 tsp vanilla extract
- ½ cup chopped walnuts
Preheat oven to 350oF.
Grease and flour a 9 inch loaf pan.
In a large mixing bowl, wisk together spelt flour, baking soda, and cinnamon. Stir in oats.
Prepare flax eggs by mixing together flaxseed meal and water. Let the mixture sit and thicken for 5 minutes.
Mix together bananas, Greek yogurt, agave nectar, and vanilla extract. Add flax eggs.
Add wet ingredients to dry ingredients and mix until well combined. Fold in walnuts.
Pour batter into loaf pan and bake for 35 – 40 minutes or until an inserted toothpick comes out clean. Remove from oven and cool for 30 minutes before transferring.
