Banana-Berry-Oat-Walnut-Chia Seed Powerbread

Ingredients
- 1 ½ cups spelt flour (may be replaced with all purpose flour)
- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp flaxseed meal
- 3 Tbsp water
- ¼ cup olive oil
- ¼ cup agave
- ¼ cup almond milk
- ¼ cup Greek yogurt (may be replaced with Greek yogurt alternative)
- 2 ripe bananas, mashed
- 2 cups fresh blackberries
- ¼ cup chia seeds
- ¼ cup chopped walnuts
Instructions
- Preheat oven to 350oF.
- Grease and flour a 9 inch loaf pan.
- In a large mixing bowl, wisk together spelt flour, rolled oats, baking powder, and baking soda.
- Prepare flax eggs by mixing together flaxseed meal and water. Let the mixture sit and thicken for 5 minutes.
- Mix together bananas, olive oil, agave, almond milk, and Greek yogurt (or Greek yogurt alternative). Add flax eggs.
- Add wet ingredients to dry ingredients and mix until well combined. Fold in blackberries, chia seeds, and walnuts.
- Pour batter into loaf pan and bake for 50 – 60 minutes or until an inserted toothpick comes out clean.
