Banana-Berry-Oat-Walnut-Chia Seed Powerbread

Ingredients
  

  • 1 ½ cups spelt flour (may be replaced with all purpose flour)
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 Tbsp flaxseed meal
  • 3 Tbsp water
  • ¼ cup olive oil
  • ¼ cup agave
  • ¼ cup almond milk
  • ¼ cup Greek yogurt (may be replaced with Greek yogurt alternative)
  • 2 ripe bananas, mashed
  • 2 cups fresh blackberries
  • ¼ cup chia seeds
  • ¼ cup chopped walnuts

Instructions
 

  • Preheat oven to 350oF.
  • Grease and flour a 9 inch loaf pan.
  • In a large mixing bowl, wisk together spelt flour, rolled oats, baking powder, and baking soda.
  • Prepare flax eggs by mixing together flaxseed meal and water.  Let the mixture sit and thicken for 5 minutes.
  • Mix together bananas, olive oil, agave, almond milk, and Greek yogurt (or Greek yogurt alternative).  Add flax eggs.
  • Add wet ingredients to dry ingredients and mix until well combined.  Fold in blackberries, chia seeds, and walnuts.
  • Pour batter into loaf pan and bake for 50 – 60 minutes or until an inserted toothpick comes out clean.
