- 1 ½ cups spelt flour (may be replaced with all purpose flour)
- 1 cup rolled oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1 Tbsp flaxseed meal
- 3 Tbsp water
- ¼ cup olive oil
- ¼ cup agave
- ¼ cup almond milk
- ¼ cup Greek yogurt (may be replaced with Greek yogurt alternative)
- 2 ripe bananas, mashed
- 2 cups fresh blackberries
- ¼ cup chia seeds
- ¼ cup chopped walnuts
Preheat oven to 350oF.
Grease and flour a 9 inch loaf pan.
In a large mixing bowl, wisk together spelt flour, rolled oats, baking powder, and baking soda.
Prepare flax eggs by mixing together flaxseed meal and water. Let the mixture sit and thicken for 5 minutes.
Mix together bananas, olive oil, agave, almond milk, and Greek yogurt (or Greek yogurt alternative). Add flax eggs.
Add wet ingredients to dry ingredients and mix until well combined. Fold in blackberries, chia seeds, and walnuts.
Pour batter into loaf pan and bake for 50 – 60 minutes or until an inserted toothpick comes out clean.
