Diet Gluten-Free, Jain, No Refined Sugars & Grains, Vegan, Vegetarian
Ingredients
½cupGreek yogurt alternative
2Tbspcilantro, finely chopped
2Tbspmint, finely chopped
1Tbspfresh ginger, grated (optional)
2tspcoriander powder
1tspred chili power
1tspgaram masala
1tspchaat masala
1tspdried kasuri methi
½tspsalt
14ozblock of tofu, cubed
2cupsveggies of choice (e.g. green bell peppers, cherry tomatoes, red onion)
Instructions
Mix Greek yogurt and spices. Coat tofu and veggies of choice in mixture. Marinade overnight (or for at least one hour).
Preheat oven to 450oF. Assemble skewers. Bake for 10 minutes, flip, and then bake for an additional 15 minutes.
